Submit ReviewHappy second birthday to us! That's right, this podcast is entering it's terrible two's and in classic toddler fashion it has become incredibly temperamental and impossible to reason with. We encountered some technical difficulties the first time we did this so you are listening to take two (itself not free from tech issues, unfortunately) and we are answering some of you, our listeners, most pressing questions! We are giving you all the mildly interesting details about how we pick a show topic, what we wish we could buy at Trader Joe's, what our favorite episode was and so much more!
The Birthday Gurl
6 apricots, chopped and pitted
1 pint raspberries
1 pint strawberries, sliced
1 ripe mango, peeled and diced
1 lime, sliced
1/4 cup sugar
3/4 cup ruby red grapefruit juice
1/4 cup elderflower liquor
2 bottles of rosé
In a large pitcher, combine all the fruit and the sugar and muddle well. Add the juice, wine and liquor. Stir and refrigerate for several hours before serving. Serve on ice and top with seltzer if desired.

Let's taco bout tortillas. We made them, corn and flour varieties. They were good! We also recreated two favorites from a dearly departed favorite taco spot, talked deviled eggs, yet again, made gallons of pico de gallo and reveled in our master frying skillz.
The Pico de Cocktail
Rim a glass with salt (we used habanero salt but kosher or smoked would be great too). Fill glass with ice then add 1.5 oz of tequila, 2 Oz pico de gallo juice and the juice of half a lime. Stir then fill rest of glass with beer.
Fresh Jalapeno Salsa
In a food processor, combine three jalapeno peppers, one clove garlic, ½ cup grape or other small tomatoes, juice from half a lime, a handful of cilantro. Process until finely chopped. Add salt to taste.
Cabbage slaw
Half a cabbage, shredded and salted for several hours, excess water drained
Juice of half a lime
2 scallions, thinly sliced
¼ cup Mexican crema
¼ cup chopped cilantro
Combine everything in a bowl.
Potato Taco Filling
Cook 2 large russet potatoes, peeled and cut into chunks, in well salted boiling water until fork tender. Drain potatoes, add ½ cup sour cream and 2 tbsp olive oil. Mash well but leave slightly lumpy. Salt to taste.

Hey, we're 50! Episodes, that is. What better way to celebrate this momentous podcast event than with the return of something as thrilling as EGGS. This year we dyed Easter eggs with food stuffs and came up with two new types of deviled eggs. The dying, not so hot. The deviling? EXTREMELY HOT. So hot in fact, we want you to get in on the action! If you are planning to celebrate Egg Sunday this week, invent your own deviled egg and share it with us! Either on Instagram (@lizandalissa) or in our Facebook group, Liz and Alissa Made Me Make It. Devil an egg and we'll send you one of our fabulous enamel pins!
Paas The Gin
In a shaker full of ice, combine 1/2 cup red zinger tea (cooled), 1 egg white, 3 oz gin, the juice of half a lemon, 1 oz simple syrup. Shake until chilled and frothy, about 15 seconds. Pour into two glasses and garnish with a marshmallow Peep.
BLT deviled eggs
1 dozen hard boiled eggs
Slice eggs in half lengthwise and put yolks in a bowl. Mash the yolks and combine with:
Spoon or pipe yolk mixture into egg white halves.
Top with bits of crispy bacon.
Antipasto Deviled Eggs
1 dozen hard boiled eggs
Slice eggs in half lengthwise and put yolks in a bowl. Mash the yolks and combine with:
Spoon or pipe yolk mixture into egg white halves.
Top with shaved parmesan.

Oops, we did it again. We are gluttons for punishment and our abysmal meat pie and Charlotte Royale didn’t do enough to scare us off of attempting more great British baking feats. And this time, we convinced a guest to join us! Kait, co-host of The Worst Bestsellers, took a stab at a star-studded Swiss roll and we made...drumroll please...a wedding cake. I don’t want to give anything away but, I don’t care, WE ALL KICKED ASS WITH THIS ONE. We also discuss further perils of candle making, what not to do with cake scraps (cough, cake pops, cough) and we’ve added a fancy new tool to our podcast pantry.
The Paul’s Cup
Rub the lemon wedge on half of the rim of a glass then dip rim in ginger sugar.
In a cocktail shaker, muddle the cucumber then add ice, Pimms, Cointreau and lemon juice. Shake for 15 seconds then strain into glass.

We’re waxing nostalgic for a time before half the things in our kitchens were covered in paraffin. Why, you ask? Because we made candles! Stupid, barely scented, fifty dollar candles. We never promised you a rose garden (scented candle) and we never promised you we’d actually succeed at half the shit we do for this show! But we can laugh at our failures, right? Or at least you all can! In addition to our adventures with wax, Alissa figured out the recipe for full box Chex mix, Liz’s vision board continues to bring the hits, Liz’s daughter discovered the wonders of self-rising flour and we learn that we are pretty clueless as to the size of an acre.
The Basic B-swax
1.5 cups of strawberry purée (purée strawberries in a blender with a splash of water)
1/4 cup honey simple syrup (equal parts honey and water, heated until honey dissolves)
Juice of one lime
3 oz gin
16 oz ice
1/4 tsp habanero salt
Combine all ingredients in a blender and whiz it up! Makes two drinks.
Full Box Chex Mix
Use a full regular size box each of Wheat Chex, Corn Chex and Rice Chex, about 3 cups pretzel sticks and 3 cups nuts. Ingredients for the “juice” are as follows:
Use instructions from the original recipe to make mix. (But don’t follow the microwave directions, make it in the oven. You’re better than that!)
Shitty candles in the making
Liz's misguided attempt at making bloody mary scented oil

Here's what's happenin' on the ranch: along with special second time guest, Lauren, we made recipes from everyone's favorite city gal turned Pioneer Woman, Ree Drummond. We all love some of Ree's recipes and make them regularly. Others, not so much. Join us as we journey through Ree's frontier and make, among other things, escalloped cabbage, the best lasagna ever, and Marlboro Man's favorite sandwich. Listen to find out if these recipes were approved by cowboys, hungry kids, and me, I mean, Ree!

Just like your mom always told you, breakfast really is the most important cocktail of the day. Breakfast foods are maybe some of our most favorite foods so we’re a little shocked that it’s taken so long to actually do this episode. We made congee, shakshuka, grits and yeasted waffles, not to mention the sunniest, most refreshing tequila cocktail you’ve ever had before 10 am.

Pucker up, we picked a bushel of lemons and turned them into absolutely everything we could think of, minus lemonade. Limoncello, lemon cheesecake, Atlantic Beach pie (we know, what?), chicken piccata, and lemon salad. Ooh la la, it was delicious. Liz has also been unable to resist remaking 2 of our 3 fast food copy cats AND she tried (and failed) to duplicate our former macaron glory.
The Sourpuss
Make lemon sugar: finely chop the zest of one lemon and combine with 2 tbsp white sugar.
Rim a champagne coupe or flute with lemon juice and lemon sugar. In the glass, combine 1 tbsp of limoncello, 1 tsp lemon juice and 3 dashes of angostura bitters. Fill glass rest of the way with champagne.
Cheesecake Number 17-Alissa used this recipe but lemon-ed it up by using lemon cookies for the crust, adding a lot of lemon zest to the batter, using limoncello in place of vanilla and topping the whole cheesecake with lemon curd (recipe for that below).
lemon-lemon-cupcakes.html/"> Lemon Cupcakes
Lemon Salad
Slice tomatoes and thinly slice onions. Place in the bottom of a large salad bowl and toss with salt. Let them sit while you prepare the other ingredients.
Chop cucumber and bell pepper and add to the bowl.
Tear lettuce into manageable pieces and add to bowl.
Toss all veg together before dressing.
Drizzle oil over the salad.
Squeeze lemons over salad. I generally end up using 1.5 lemons for a full head of lettuce, but do it to taste. It should be bright and lemony.
Generously salt and very generously pepper the salad and toss everything together. Taste a piece of lettuce. Add more lemon, oil, salt or pepper as needed.

What do you get when you combine a hankering for basic AF chili, a woman with zero chill on Instagram stories and a podcast in constant need for new content? Homemade fast food, of course! We’ve long said that we wanted to make a chicken sandwich that was both delicious AND didn’t infringe upon the rights of others. This episode we were finally inspired to do it. Find out to what success we were able to recreate such fast food classics as “Wendy’s Chili!”, “The Big Mac!” and the chicken sandwich everyone hates to love, you know, it’s Chick-Fil-A.
The "Do You Want Fries With That?"
For two drinks:
1 lemon, juiced
1 lime, juiced
3 oz of tequila
8 oz of Coca Cola
Combine lemon juice, lime juice and tequila. Divide evenly between two ice-filled glasses. Top each glass with 4 oz of coke. Garnish with a slice of lime and a slice of pickle if you’re feeling awesome.

Happy New Year! This week we went against every skeptical bone in our bodies and made vision boards with Kate Spencer, cohost of Forever35 and experienced vision boarder. Spoiler: we liked it. Will the secret work? Will Alissa actually knit something in 2019? Will Liz breathe the same air as Harry Styles? Only time will tell but we're feeling positive! We also find out what blasphemous things were added to Chex mix this holiday season, how many chickens gave their lives for Alissa's Christmas dinner and learn the answer to the question at the forefront of everyone's minds: what gift did Claud make for Liz???
The Vision Blurred
To make spiced lemon simple syrup:In a small sauce pan, combine 1/2 cup sugar, 1/2 cup water, 1 star anise, 5 whole cloves and the zest from one lemon (cut off in strips). Heat over medium heat until the sugar dissolves. Remove from heat and allow to cool. Strain into a separate container and discard solids.

10 oz very sharp shredded cheddar
12 oz cream cheese (completely softened)
1 bunch finely chopped scallions
¼ tsp cayenne
The juice of 1 lemon
3 tbs Worcestershire sauce
1.5 tsp seasoning salt
1 tsp garlic powder
½ tsp onion powder
Chex mix to cover (double the juice, obv)
Combine all ingredients in a stand mixer with paddle attachment and mix until smooth. Scrape contents onto wax paper or Saran Wrap and form into a ball. Refrigerate till firm, a few hours at least. Before serving, roll cheese ball in lightly crushed Chex mix, pressing in to coat. Serve with pretzel chips or sticks.
The Kelly Family's Rumaki Recipe:
Ingredients:
Directions:
Wasabi deviled eggs with jalapeños
12 hard boiled eggs
¼ cup wasabi mayonnaise
¼ cup regular mayonnaise
4 scallions finely chopped
1 tbsp toasted sesame oil
1 tbsp rice vinegar
1 jalepeno thinly sliced
Cut eggs in half lengthwise. Remove yolks and put them in a bowl. Reserve whites on a platter. Combine the yolks with mayonnaises, scallions, sesame oil and vinegar. Mash with a fork or use a hand mixer to whip yolks. Taste the yolks and season with salt if necessary (I usually find the mayonnaise makes the yolks salty enough). Fill the egg white halves with the yolk filling either with two spoons or a piping bag. Garnish each egg half with a slice of jalepeno.

We are stuffed but basking in the glow of the menorah. Be sure to listen to the end of the episode, we have a very exciting something that we want to try and it involves YOU!
The Gimel and Tonic
This is more of a technique than a recipe. This drink is a very lime heavy gin and tonic, previously called the Gim and Tonic, for its similarity to a gimlet.
Fill a large glass with ice. Pour 2 oz gin over the ice then add the juice of 1-2 limes, depending on personal taste and the size of your limes. Top with a splash of tonic water.

Pie, glorious pie! Is it the least exciting part of the most exciting meal of the year? Yes! But is it still delicious and worth talking about? You tell us! JK, anything worth making is worth talking about, amiright?! If you say no then this is not the podcast for you. In this episode we talk about the six (6!) pies we made a week before the most pie heavy holiday America has to offer. We also fill in the gap between Liz’s pysanky phase and her crocheted mitten phase and learn about Alissa’s first job and the smells associated with it!

The Bloody Sloshed
750 mL (one bottle) light red wine
½ cup tart 100% cherry juice
½ cup sugar
¼ cup luxardo cherries
1 tbsp luxardo cherry juice
Pour wine into a shallow baking dish and put in freezer until almost solid. It will not freeze entirely because of the alcohol.
While wine is freezing, put cherry juice and sugar in a small sauce pan over medium heat. Stir until the sugar is dissolved. Allow to cool.
Scrape frozen wine into a blender. Add ½ cup of the cooled cherry syrup, the luxardo cherries, the luxardo cherry juice and 1 cup of ice. Purée until smooth (you can add the cherries halfway through blending if you prefer them to be a little chunkier). Put in freezer for at least a half an hour, until slush thickens.

Happy 4th of July, Americans! And happy July 4th, rest of the world! Whether you're celebrating or not, it's always a good day for potato salad, cole slaw, pasta salad and hamburgers. So join us for a summertime picnic, complete with punch for all ages and alllllll of our many opinions on picnic foods.
Picnic Punch (You in the Face)
1 small watermelon cut into small chunks 1 English cucumber 3 1/2 cups water 1 cup sugar 1 small bunch fresh mint 1 cup lemon juice Vodka
Juice the watermelon and cucumber separately in a juicer or blend in a blender and strain out the pulp. Keep separate.
Combine water, sugar and mint in a sauce pan and heat over medium heat until sugar is dissolved. Let sit until cool. Remove mint.
Combine watermelon juice in a pitcher with sugar water and lemon juice. Chill along with cucumber juice in fridge until cold.
To serve, pour watermelon mixture in a glass over ice (add vodka for grown ups!) then add about an ounce of cucumber juice, pouring slowly so the cucumber juice floats on top.
Liz Harvatine's Strongly Held Pasta Salad Opinions
Cook one lb short cut pasta (preferably something curly with a lot of ridges. I like to use multicolor pasta) in very salty water until al dente, about a minute shy of the recommended cooking time on the package. As soon as it’s cooked, strain it and run cold water over until it’s cool.
Chop up your veggies, meat and cheese into bite sized pieces and put them in a very large bowl. The key to this recipe is to add A LOT of stuff. There should be more stuff than pasta. This is what I like to use:
You can’t go wrong with more veggies so add as much as you want!
Add the pasta and mix in a couple spoonfuls of mayonnaise, some kosher salt and black pepper. Start with just a little salt and add more if you need it. As for the mayo, you don’t need much. You want everything to be coated but not dripping. Start with two spoonfuls, mix it well and taste it. Add more if you think it needs it. You can also add a splash of cider vinegar or red wine vinegar but really mayo is all you need.
I will serve it without chilling if it’s dinner time but I have never given a second thought to eating it cold right out of the fridge. It’s really good that way! I hate leftovers but I will eat this for breakfast.

The French Salmon-y Salmon
Unlike our cookies, this drink only has the color of salmon, not the actual flavor.
For 2 cocktails

It's summer vacation and that means we are going to do our best to keep the off-week bonus episodes coming but we can't guarantee there won't children screaming in the background. Today we are together making macarons for our next episode that will be blissfully child freeeeeeee!!!!!!
We’ve acquired some of that sweet millennial heat from our guest, Julia Williams, to pamper (?) ourselves with homemade scrubs and lip balms. I know what you’re thinking, have they not learned their lesson after the make-up and the face masks? What can we say, we just love putting food on our faces! Also, what else are we going to do with this 5x lifetime supply of beeswax pellets?

3 tsp virgin coconut oil
3 tsp virgin olive oil
Juice from ½ lemon

Mini episode! The masses have spoken so we're back with another mini episode. This is a little bit of a Night of a Thousand Dips post mortem and we break down the Liz and Alissa patented method for dipification, discuss how to dedipify something and explore the life cycle of a dip. Liz also mentions quite a few of her in-laws, for some reason.
We've been podcasting for one year so we decided to make one thousand dips and talk about them in front of a live audience to celebrate! Ok, we didn't actually make 1000 dips, we're being hyperbolic, give us a break already. It did feel like a thousand and, dare I say, taste like a thousand? Let us regale you with our tales of dipification, gallons of milk punch, romance novels and Mark Ruffalo? It's all here for you!
The Drinks!
I Dip, You Dip, Milk Dip Milk Punch
We used this recipe but substituted light rum for the batavia arrack: https://www.splendidtable.org/recipes/black-tea-port-milk-punch
Big Dipper Sangria
Combine two bottles of rose with sliced strawberries, thinly sliced oranges, raspberries, and about a half cup of rhubarb simple syrup (or any other simple syrup of your choice). Let it sit overnight in the fridge before drinking for maximum flavor.

Surprise! It's a mini episode! We are busy making dip, dip and more dip for our live show, May 19 but we thought we'd take a break and give a few updates, visit Chex mix corner, and learn what incredible trick Alissa has devised for remembering dip recipes.
If you can't be at our live show, please join us in a virtual dip party! Make dip, buy dip, order dip at a restaurant, just EAT DIP Saturday night and share a photo on your social media platform of choice. Use the hashtag #NightOfAThousandDips and tag @lizandalissa to be sure we see it!
And if you're reading this in the future? Be kind to yourself, make some dip for dinner tonight. You're worth it.
This episode is ostensibly about bread but somehow we manage to talk about dicks WAY too many times. Sofie, skip this one for sure. We also talk about children's literature, Finnish comfort food, Japanese reality tv and candy that does not at all look like candy. Also, Quincy, the world's hungriest cat update! And if you can't come to our live show, find out how you can still participate from wherever you are, May 19!
Also, get tickets to our live show. They're free!!!!! May 19!
Challah ‘bout that ‘barb
For the rhubarb simple syrup:
1.5 cups water
1.5 cups sugar
Large bunch of rhubarb, chopped into one inch pieces.
Combine sugar, water and chopped rhubarb in a small pot. Bring to a boil then cover and simmer for 20 minutes. Strain through a mesh strainer, pressing the rhubarb pulp with a spoon.
For the cocktail (makes 2):
In a cocktail shaker full of ice, combine three shots of gin, five tablespoons of rhubarb simple syrup and shake until chilled. Pour into two champagne flutes and top with champagne or other sparkling wine.

Get ready to hear us say the word PIT roughly 43,902 times. We counted. Along with our special guest Leasa, we made three varieties of homemade deodorant with, no joke, surprising results! We also give you an update on Liz's corned beef, take 2, learn that our accents (?) have been confusing some of our listeners and find out which kitchen utensils Alissa considered applying to her underarms.
Check out Leasa's Instagram and her amazing Disney dresses!
LIVE SHOW!
Yes, we are planning a live show to celebrate our first anniversary! The theme will be "Night of a Thousand Dips!" and we want YOU to come, dip in hand! We will record a live episode, share dips galore and of course dip into a fabulous cocktail! We will have a link to get free tickets very soon but in the meantime, details are as follows:
Saturday May 19, 7:00, West LA (exact address will be sent to ticket holders)
Also, you don't HAVE to bring a dip to share but we would love it if you did! We might even talk about your dip on the show!
The Pit Crew
2 bottles of rose
1-2 cups each of chopped peaches and mango (I used frozen)
1 cup of pitted cherries (I used TJ's jarred Morello cherries)
2 cups of cherry juice, reduced to 1 cup on the stove.
Combine all the ingredients in a pitcher and let it sit overnight in the fridge. To serve, pour in a glass full of ice and top with a little seltzer.

We're also drinking more fat washed bourbon, finding disgusting things inside of Easter eggs, joining the sisterhood of the traveling currants and discovering new and creative uses for stump remover AND lime juice.

We are back! Back from Las Vegas, back from Disney World and back to releasing episodes on schedule! What better way to celebrate than to buy a couple of brisket babies, soak them in some salt and spices and then turn them into corned beef and pastrami?! While we wait for our meats to cure, we are talking to Heather Grant, quilter, friend and project-cooking super fan. Heather and her friends created the ultimate Reuben sandwich and she is here to tell us all about her pastrami making journey and see if she can impart a little wisdom. We’ll also talk about how Liz’s Disney costumes turned out and whether or not Liz’s mom consents to being internet pickle famous.
The Baconator (part deux)
In an old-fashioned glass filled with ice, combine maple syrup, bitters, and bacon bourbon. Squeeze orange peel over glass and add. Stir until drink is cold. Add cherries and garnish with bacon.
Bacon Bourbon
Remove 1/4 cup bourbon from bottle and save for another day. Or drink it right now, I don't care. Pour bacon fat into bottle and put cap back on. Gently shake the bottle to combine. Allow the bourbon to sit out at room temperature for about four hours, shaking occasionally. You want to keep the fat from solidifying in a big clump too soon. Put the bottle in the fridge and chill for 3 - 7 days. Strain the bourbon through paper coffee filters and it's ready to drink!
Maple Candied Bacon
Heat oven to 375*. Lay bacon slices on a baking rack in a rimmed baking sheet, lined with parchment paper or a silpat liner (for easy clean up.) Sprinkle bacon with black pepper and brown sugar. You don't need to use much sugar because too much will just melt off. Back for 15 minutes. Remove from oven and brush with maple syrup. Bake for another 5 minutes or until crisp.

It's true, we fought against our shy, introverted tendencies and made FRIENDS! That counts, right? We spent four days at the Modern Quilt Guild's annual convention, QuiltCon, and made friends with a few listeners, forced strangers to wear a button with Liz's face on it and also did a little bit of sewing. Also in this episode, learn which former guest has NEVER TRIED CHEX MIX (blasphemy!), whether or not Liz will meet her bananas goal of making 15 costumes before her trip to Disney World, why Alissa can lay claim to the epic legacy of Friends the tv show, PLUS we made up a friend quiz and YOU can win a fabulous prize if you enter!
The "Cuke Complete Me"
First, make Claud's Refrigerator Pickles:
In a large pot, combine 2 quarts of water, 1/2 cup salt, 1/4 sugar, 1 cup of white vinegar. Bring to a boil to dissolve salt and sugar. Let it cool before you pour it over pickling cukes packed in jar with a bunch of fresh dill and a head of sliced garlic. Cover and leave on the counter for 24 hrs and then refrigerate. Pickles will be ready to eat after 24 hours.

Happy New Year middle of January! You may have given up on your New Years resolutions already but we're gaming the system by only starting them now! Find out why only one of us has vodka in her drink, why Blue Apron will never sponsor us and why Liz is still coming down off the high of last year's resolution. Cocktail
The Not-So-Dirty 30
This episode's cocktail is a little different because only one of us is drinking! So feel free to drink this with or without vodka, it's tasty both ways! Also, Liz's drink had basil and lemon juice and Alissa's was cilantro and lime. Do what your heart tells you. Both are delicious.
In a glass, muddle a 2" piece of cucumber, cubed, four leaves of basil (for Liz) or a small handful of cilantro (for Alissa) and the juice of one lemon (Liz) or lime (Alissa). Top with sparkling water and a shot of vodka if you are so inclined.

Curdles and Whey Part Deux
We're betting you didn't get enough of curdled milk last episode so we're bringing you more, more, MORE! This week we've made 6, count 'em 6 of baby's first dairy products. We talk about all of the cheesy details of making mozzarella, ricotta, yogurt, butter, cream cheese and cottage cheese. Plus, dairy gets our brains working because we come up with about 50 ideas while recording this episode. We need you to take notes.
Keywords/Drinking Game Fodder: cheese quilt, Little House on the Prairie, WHEY
This week we have 2 cocktails! One uses whey leftover from yogurt and one does not, for the whey averse.
Yes Whey
1 hibiscus tea bag
4 oz vodka
1 oz yogurt whey
½ oz lemon juice
½ oz simple syrup
Steep tea bag in vodka for five minutes. Discard teabag. In a shaker combine hibiscus vodka, yogurt whey, lemon juice, simple syrup, ice. Shake vigorously for 20 seconds. Serve in martini glasses. Makes 2 cocktails
No Whey, Jose
2 fresh jalapenos, sliced
12 oz of Jose Cuervo Silver Tequila
4 oz of Triple Sec
24 oz Frozen Mango
1/2 sugar or simple syrup
2 limes
ice
Tajin seasoning
Place the sliced jalapenos and tequila in a glass jar with a lid. Let steep for at least 24 hours, or for a maximum of 72 hours. The longer it sits, the spicier it gets.
Strain out and discard the jalapeno slices and seeds.
In a strong blender, combine infused tequila, Triple Sec, frozen mango, sugar, the juice of the limes and a couple handfuls of ice. Blend to desired consistency.
Rim a glass, first with your squeezed lime, and then in a combination of 1 part tajin and 1 part sugar. Pour in your cocktail and enjoy!

Liz and Alissa Make Milk Punch - Curdles & Whey, PART 1
Join us as we delve into the fantastical alchemy that is clarified milk punch! We talk about how we discovered this gross sounding but heavenly tasting cocktail, learn about it's sometimes disgusting origins and make enough silky smooth drinks to last us through 2019 at least.

Thank you @houseonhillroad on Instagram for naming our beefy treats
2 tbsp olive oil, divided 2 cloves garlic, minced 1 tbsp fresh rosemary, finely chopped 1/4 cup dry sherry 1/4 cup heavy cream 3/4 lb beef tenderloin, cut into 16 3" strips, about 3/4" thick 1 sheet frozen puff pastry, thawed One egg
Preheat oven to 450*..
Put 1 tbsp oil, garlic and rosemary in a cold pan and place over medium heat. When garlic is fragrant and just turning golden, add sherry. Cook until sherry is reduced by half. Add cream, stir until sauce bubbles and starts to thicken. Season with salt and pepper to taste. Remove from heat and set aside.
Pat beef dry with paper towels. Season liberally with salt and pepper. In a separate pan, heat remaining tbsp of oil over high heat until it's almost smoking. Sear the beef on all sides. It should be browned but not cooked through. Set aside.
On a floured surface, roll out the sheet of puff pastry to a 12" x 12" square. Cut into 8 6" x 3" rectangles then cut each rectangle diagonally into 2 triangles. Spread a small dollop of cream sauce across the base of one triangle. Lay a strip of beef on top of sauce. Roll beef up in pastry and lay on a large baking sheet. Repeat with remaining beef and space evenly on baking sheet.
Lightly beat egg with a splash of water. Brush each pastry roll with egg.
Bake until golden, about 15 minutes. Serve with horseradish cream sauce (recipe below). Horseradish Cream Sauce 1/2 cup sour cream 2 tbsp prepared horseradish 1 tbsp minced fresh parsley Salt and pepper to taste Combine all ingredients.
