January is almost over and we're rounding out our culinary triptych of chefisodes (sorry) with Great British Menu Welsh champion Aled Williams. Aled is a supremely talented and hard-working chef from the Welsh island of Anglesey. He now lives and works from his True Foods headquarters in North Yorkshire and that's where we went to meet him.
