Eddie's an award-winning plant-based chef who runs the intimate 'Walled Gardens' restaurant where he creates some of the most unique gastronomical delights available anywhere. Craig went to Eddie's house / restaurant / laboratory to sit down and have a chat with Eddie about creativity, ingredients, doing things differently, the pressures and passions of kitchens and loads, loads more. It's a brilliant insight into one of the most exciting cooks of a generation.
