[06:51] Upcycled food. In other words, the leavings, the ends, the parts that aren't perfect. We all know about the cart of less-than-perfect food at the back of the produce section of many supermarkets. Look for those foods to come off the cart and become part of the main produce section.
[12:44] Boozy kombucha. Yep. Think about the already-hot trend of boozy fizzy water. This seems a logical extension. Retails are making big buys of kombucha "cocktail" mixes. Health + booze. Okay then!
