On this episode Miles needs a bit of a mental refresh, so he talks about all the things that makes him happy when he needs a slight pick me up. We talk about pretty much everything except brown paper packages tied up with string. Miles shares some of his favorite simple recipes that bring him joy, you don't want to miss this one.
Chili Oil and Garlic Pasta (Aglio e Olio)
1 serving of long pasta (spaghetti, bucatini, etc)
4 tbsp of chili oil
2 garlic cloves (minced/chopped)
Parmesan (optional)
Parsley (optional)
Bring water to a boil, salt, and cook pasta one minute under al dente according to box instructions. While pasta is cooking, add 3 tbsp of chili oil to a cold skillet and turn on to medium low. Add garlic and cook for 2-3 minutes. Turn off heat and add 1 tbsp room temperature chili oil. Add pasta directly into sauce from pot and add a ladle full of pasta water. Mix until emulsified. Serve immediately top with parmesan cheese and parsley.
Miles's Moscow Mule
1.5 oz raspberry vodka
4-5 oz ginger beer
.5oz-1oz lime juice to taste
Grenadine or cranberry juice (for color, optional)
In a copper mug or bar glass add ice. Pour in lime juice, raspberry vodka, and ginger beer (in that order). Stir. Add a splash of grenadine or cranberry juice for color. Enjoy cold, garnish with a lime wedge.
