Today, as the owner and executive chef of the renowned Edible Beats Group, Cucci has reinvigorated Denver’s restaurant culture. His six award-winning eateries (Root Down, Linger, El Five, Vital Root, Root Down DIA, and live music restaurant Ophelia’s Electric Soapbox) offer delicious, vegetable-forward menus using innovative sustainability practices and local produce.
Each of Chef Cucci’s restaurants are based in a uniquely designed space inspired by the building’s history—from Vital Roots’ original candy factory to Ophelia’s former brothel to Linger’s start as a mortuary. With his focus on healthy, local and sustainable food--paired with dynamic and innovative restaurant design--Cucci has proven himself a leader in holistic dining and one of the industry’s most creative pioneers.
