I cooked a tri-tip on the weekend. It was Alberta Angus beef from Hamilton Farms near Cochrane, AB. I cooked it on indirect heat on my Weber Kettle using Maple Leaf Charcoal and Weber pecan chunks. It was rubbed with Kosmos Q Texas Beef Rub and finished with a drizzle of Blues Hog Original Sauce.
