Today, he will be interviewing Silvano Brescianini (Consorzio Franciacorta) & Chef Mauro Zacchetti (Al Maló Cucina e Miscelazione)  More about today’s guests The Franciacorta Consortium is the body which guarantees and monitors Franciacorta production standards, as the first Italian wine produced exclusively with the bottle refermentation process to have obtained the Protected and Guaranteed Designation of Origin (DOCG) denomination in 1995. The Consortium’s work takes various forms ranging from safeguarding its brand and region, promoting its products via ongoing work on its production regulations and denominations, consumer information campaigns and promoting Franciacorta as an expression of an area, a wine and a production method. Founded on 5 March 1990 its head offices are in Erbusco, in the heart of Franciacorta. The Consortium has 123 wineries.  SILVANO BRESCIANINI Born in 1967 in Erbusco, at the heart of Franciacorta, Silvano Brescianini, President of the Franciacorta Consortium, developed his passion for fine wines at Antica Osteria del Ponte before joining the renowned San Domenico restaurant in Imola. In 1991, he became part of Barone Pizzini winery, holding various roles and currently serving as the general manager. Since 2019, Silvano has been the President of the Franciacorta Consortium. Thanks to some of the greatest chef around the world (such ad Gualtiero Marchesi, Andrea Berton, Alfio Ghezzi and Norbert Niederkofler) he could improve his skills and learn the art of food and hospitality industry. In 2019 together with Alberto and Lodovico, he opened "Al Malò Cucina e Miscelazione" in Rovato, in the heart of Franciacorta. Thw mission was to serve food, wines and drinks in the way they would love to find them served around the world. Born in Mexico, with a mother from Hawaii via Korea and an anthropologist father from New York via Paris, he was weaned on exotic and delicious foods. Marc and his photographer wife Kim are the authors of 14 books including a pioneering series of illustrated wine-food-travel books: The Wine Roads of Europe, The Wine Roads of France, The Wine Roads of Italy (Premio Barbi Colombini), and The Wine Roads of Spain.
