Today’s interview features Maria Elisabetta Fagiuoli of Montenidoli Stevie Kim and her team traveled to the Bologna Slow Wine Fair in March 2023. There they conducted dozens of interviews with some of Italy's most inspiring producers. Join the fun every Thursday afternoon! More about today’s winery: “Montenidoli: 200 hectares/500 acres of woods on the hill overlook San Gimignano, in front of Chianti Classico, between Florence and Siena. It is unpolluted land, high upon the hill, with clean air, far away from any chemical poisons invented by humans. When we arrived in 1965, the land was abandoned: the woods had invaded the fields, the olive trees were running wild, and the vines were covered by bushes. We committed ourselves to the soil and endeavored for a new beginning. We began breeding rabbits, as their manure was excellent for fertilizing the soil. We bought worms, spreading them in the fields to create humus and soften the earth. We pruned only in winter when the vegetation was dormant. All the cuttings were ground and fermented to make compost, which we used to fertilize the plants.
