TRIPPED AND FELL INTO COFFEE Episode 30 Part 1 Bird Rock Coffee Roasters 2212 Carmel Valley Rd. Del Mar CA. Coffee drinkers have different ideas of perfection. For some it's the type of roast, while for others its the search for origin, fair-direct trade or a specific blend. Do you now how to use your local owner or barista to choose and prepare your favorite mouth watering elixir? Does your favorite coffee shop give back to the community and to the farmers who grow and produce the beans that eventually end up in your cup? In this episode of  CCCRS (Tripped and Fell into Coffee) owners Jeff Taylor, and his wife Maritza, along with coffee buyer Jacob White, took time out of their busy schedules to sit down and talk with us, about all of that and more! The discussion in two parts that followed,we feel, is a master course in all things coffee. In 1993 Jeff was a photojournalist in Topeka Kansas, and discovered Topeka was "coffee dry". Out of "manic panic" and necessity for quality coffee he opened a coffee shop. Now 27 years later they have a thriving business with six coffee stores in San Diego, and is now part of the PT's coffee family of Topeka Kansas. His philosophy is to concentrate on making the absolute best coffee and the customers will find you. Maritza is from Columbia and in charge of quality control. Her internship from college led her to the Federation of Coffee Growers, a specialty coffee program, and then to judging coffee competitions, where she met Jeff, and it was a match made in coffee heaven. With her sensitive palate it was agreed that Maritza " always has the final say when it comes to selecting coffee." Jacob went from barista to coffee buyer where he forecasts and assesses the needs of exporters, and farmers. He also works with quality control and roasters to meet the requirements of customers and growers. From roast profiles, to what makes a good barista Jacob has the answer. Not only did they receive 2012 roster of the year by Roast Magazine and produce 90 + coffee from Coffee Review, Maritza is a Q grade certified roaster ( a person who is certified by the Coffee Quality Institute who is able to analyze Arabica coffee through smell & taste on site). They also won the 2017 Good Food Award. From selecting the right beans, the "right"country of origin for you. to choosing the perfect roasting profiles, and to what makes a great barista, this episode may become a reference source for anyone who loves coffee.
