Opened nearly 30 years ago, Spolumbo’s has become an institution on the Calgary food scene. Prior to our conversation, I had briefly chatted with Tony on a few occasions while in the restaurant and I’ve heard enough about him over the years to be pretty sure that he was a quality guy.
